About Professor Zaaa’s Pizza

Professor Zaaa’s opened in January 2026 with lineups down Wyandotte Street East and sold out roughly 190 Detroit-style deep dishes a day in its first week. The professor is Dean Litster, a 25-year pizza maker who rose from folding boxes at fifteen to corporate pizza chef at Armando’s and owner of its Amherstburg and Leamington stores, with international competition placings for Windsor-style pizza in 2014 and 2019. He runs the shop with partner Lisa Bottone. The menu is Detroit deep dish plus an “elevated Windsor-style” round, everything made in house, including the canned-style mushrooms, on Galati cheese. Best sellers: Porko Cinco, Pepperoni Paradise, Chicken Bacon Ranch, and the garlic knots. Wednesday to Sunday only. See our Detroit-style pizza guide.
